Tomato Based Sauce

Using Garlic Lady's Thai Style Bloody Mary Mix

A tomato sauce is any of a very large number of sauces made primarily out of tomatoes, usually to be served as part of a dish (rather than as a condiment). Tomato sauces are common for meats and vegetables, but perhaps best known as sauces for pasta dishes.

Tomatoes have a rich flavor, a high liquid content, very soft flesh which breaks down easily and the right composition to thicken up into a sauce when cooked (without the need of thickeners like roux). All of these characteristics make for ideal simple and appealing sauces.

The simplest tomato sauces consist of just chopped tomato flesh (with the skins and seeds optionally removed), cooked in a little olive oil and simmered until losing its raw flavor and seasoned with salt.

Water is often added to keep it from drying out. Onion and garlic are almost always sauteed before adding tomato. Other seasonings typically include black pepper, basil, oregano and parsley. Ground or chopped meat is also common.

Using our Thai Style MILD Bloody Mary Mix - as your base: The key ingredients in Thai Style MILD Bloody Mary Mix are three of my popular pickled creations: Crunchy Asparagus, Sicilian Pickled Garlic and Columbia Gorge Cocktail Onions. I combine these key ingredients with puree, crushed red chili, black pepper, dill, basil, oregano, Worcestershire sauce, filtered water, vinegar and several family secrets.


A. Northwest Smokey Mountain Salad Dressing:

1/2 Cup Thai Style Mild Bloody Mary Mix

1/4 Cup Olive Oil

10 (or to taste) Cloves of The Garlic Lady - Mount St Helens Smoked/Barbecue Pickled Garlic

In whatever processor you use, place all ingredients and blend until smooth. Makes 4 or more servings.

B. Oregon High Dessert Dressing/Sauce:

1/2 Cup Thai Style Mild Bloody Mary Mix

1/4 Cup Olive Oil

2 teaspoon Sage

1/4 Cup favorite mushroom

10 (or to taste) Cloves The Garlic Lady - Mount St Helens Smoked/Barbecue Pickled Garlic

1 Tablespoon brine from The Garlic Lady garlic jar

In whatever processor you use, place all (except Garlic Cloves) ingredients and blend until smooth.

Coarsly chop Garlic Cloves. Stir into ingredients.

Chill and serve over fresh spinach salad.

Makes 4 or more servings.

C. Cinco De Mayo Dressing/Sauce:
1/2 Cup Thai Style Mild Bloody Mary Mix

1/4 Cup Olive Oil

10 Cloves The Garlic Lady's Jalapeno Garlic

2 Tablespoons brine out of the Jalapeno Garlic jar

1 teaspoon cilantro (Coriander, also commonly called cilantro in North America.)

3 Tablespoons Lime Juice

In whatever processor you use, place all ingredients and blend until smooth. Makes 4 or more servings.


Using our Thai Style SPICY Bloody Mary Mix - as your base: Like the Thai Style MILD Bloody Mary Mix I use three of my popular pickled creations. Instead of using Columbia Gorge Cocktail Onions in this recipe I use my fire breathing Mexican Style Habenaro Onions. I combine these key ingredients with puree, crushed red chili, black pepper, dill, basil, oregano, Worcestershire sauce, filtered water, vinegar and several family secrets.
